The Recipe

Broccoli Corn and Black Bean Salad

  • 1-2 heads broccoli (or one bag of broccoli florets)

  • 1 can black beans

  • 1 can corn (or grill a couple ears of corn and cut off the cob)

  • 1 package cherry tomatoes (12-16 of them)

  • 1/2 red onion

  • 1 avocado

  • 1/4 bunch cilantro

  • 1/3 cup oliive oil

  • 1 lime, juiced

  • 1 tbsp honey

  • 1 tsp cumin

  • 1 tsp garlic powder

  • salt and pepper to taste

For the salad, finely chop your broccoli, quarter your tomatoes, mince your onion, dice your avocado, and rougly chop your cilantro.

Throw it all in a bowl.

Drain and rinse the beans and corn and throw those in the bowl too.

In a separate bowl, whisk together the olive oil, lime juice, honey, cumin and garlic powder.

Pour that all over your bowl.

Mix everything together and season with salt and pepper until it tastes how you want it to.

The Bullshit

Had a bunch of broccoli in the fridge and wanted to figure out how to make it taste good with tacos, so I threw this together. It’s pretty good, i liked it, and it was very broccoli forward. My wife said it would be better without the broccoli. Try it like that too, why not.

Either way, nice light side. I like it with the broccoli.
