The Recipe

Jeff’s Second Place Chili

  • 1 lb ground beef (or whatever meat you like for chili)

  • 4-6 slices bacon

  • 3 cans beans (I like 1 kidney, 1 black, 1 pinto)

  • 1 can fire roasted tomatoes

  • 1 small can tomato paste

  • 1/2 red onion, minced

  • 1/2 bunch cilantro, roughly chopped

  • 3-4 cloves garlic, minced

  • 2 jalapenos, seeded and diced (to add more heat, leave the seeds in, and add a habanero or two)

  • 12oz bloody mary mix

  • 2 tsp fish sauce

  • 2 tsp soy sauce

  • 2 tsp cumin

  • 2 tsp chili powder

  • 1 tsp oregano

  • 1 tsp salt

Cut your bacon into small pieces, and cook in a pan until cooked, but not crispy. Remove from pan, but leave the grease.

Cook your beef in the bacon grease until browned.

Drain most of the liquid out of the cans of beans

Add all ingredients to a crock pot, and cook on low for 8 hours

The Bullshit

I’ve entered this chili in a few work chili cookoffs. It’s always pretty good but never a winner, so here’s my second place chili (2018 second place CDG security chili cookoff, open category, thank you very much).

The goal here is just to have a very savory chili. I don’t like anything sweet in my chili. Ideally very spicy as well, but I have to tone down the heat cause of my damn kids, or eat a whole crock pot of chili by myself.

This pairs well with a shit ton of grated cheddar cheese. Works great on a hot dog (also with a shit ton of grated cheddar cheese).
