Brussels and Fennel

  • 1 bulb fennel

  • bunch of brussels sprouts

  • 2-3 tbsp olive oil

  • salt and pepper to taste

Cut the fennel greens off of the fennel, slice the bulb in half, and wash thoroughly. After its nice and clean, cut in half again and slice thin

Cut your brussels sprouts in half, and slice thinly, discarding the bottoms

Combine all in a big bowl and coat with olive oil, salt and pepper

Roast in the oven at 450 degrees for 12-15 minutes

If you want more flavor, toss in something else afterwards like chili oil or a balsamic reduction

Feel good about yourself for eating vegetables

The Bullshit

Iā€™m really trying to eat more vegetables, and since people keep raving about fennel (maybe i need to listen to new people), I wanted to give it a shot. I had some brussels sprouts on hand, as one does, and decided to just slice it all up thin and roast it together.

Turns out, its a really good veggie combination. Even my kids like it. Do your kids eat brussels sprouts and fennel? They might if you try.
