The Recipe
Thai Inspired Grilled Chicken
The Base
2-3 lbs chicken of your choice
Thighs and Wings are best, but breast meat works great also
8oz coconut milk (if you only have a full can, thats fine too)
1/3 cup fish sauce
2 tbsp soy sauce
4 cloves garlic, minced
The flex spots (whatever you have on hand, and whatever quantity you have honestly. I’ll put what i usually add if i have any of the given ingredients.)
1 lime, zested and juiced
1 inch piece fresh ginger, minced
1 small shallot, minced
2-3 green onions, thinly sliced
2 stalks lemongrass
1/2 bunch cilantro
1-2 jalapenos (minced)
3-4 thai chiles (minced)
Combine all ingredients in a bowl and whisk.
Place chicken in a large ziplock bag, add the marinade, and marinade for 2-24 hours (the longer the better).
Grill.
The Bullshit
This is my go to recipe for grilled chicken. I try to always stock the base ingredients, so this is often just a clean out the fridge type of recipe. The base marinade on its own is pretty good, and flexible enough where you can anything from the flex spots and it will turn out great.
