The Recipe

Warm Greens and Couscous Salad

  • 1 cup pearl couscous

  • 1 bunch green or red kale

  • 1/2 lb brussels sprouts

  • 1/2 cup panko breadcrumbs

  • 2 tbsp butter

  • 1/2 lemon

  • butter

  • olive oil

  • salt and pepper to taste

Roughly chop your kale and thinly slice your brussels sprouts (use a mandolin if you’re brave). Roast at 450 degrees for about 13-15 minutes

Toast panko breadcrumbs over medium low heat in the butter, constantly stirring until they’re a golden color

Cook the Pearl couscous as per the directions on the box/bag

Combine the couscous, greens and panko in a bowl (or i just use the pot that i cooked the couscous in), add juice from 1/2 a lemon, olive oil, and salt/pepper to taste

Top with your favorite protein

The Bullshit

I'm not really a visionary for combining green vegetables and grains, but i need my own recipe like this so here it is. It’s healthy, it’s pretty filling, and it goes with most any protein.

You can cut the panko if you want, but that slight crunch adds a lot, so i think you should keep the panko.
