The Recipe

Fish Sauce Marinated Pork Tenderloin

  • 1/3 cup fish sauce

  • 1/3 cup brown sugar

  • 2 tbsp dark soy sauce

  • 4-6 cloves garlic

  • 1 small shallot, minced

  • 1/3 bunch cilantro

  • probably some lemongrass (the store didn’t have any when I made this, but i't’d make it better)

  • Juice of 2 limes, zest of one

  • 2 lbs pork tenderloin

Combine all marinade ingredients in a blender and blend until smooth, or mince everything and whisk it up really good.

Poke your tenderloin(s) with a knife or fork, put in a ziplock bag

Pour marinade into ziplock bag and marinate overnight

If you’re grilling (recommended), set yourself up with a hot and cold zone, sear all sides of the tenderloin on the hot side, then put on the less hot side, flipping when you feel like something to do, and cook to about 140-145 degrees.

If you’re pan searing, do the same, but instead put it in a 300 degree oven until cooked

Let it rest, slice it thin, serve over rice and whatever sides you feel like.

The Bullshit

I haven’t posted a recipe in forever, and since the blog is mostly a place for me to refer to things I want to cook more than once, I had to get this one written down.

It’s basically just my thai chicken recipe with a few tweaks and put on a pork tenderloin. Pretty groundbreaking stuff. It is really fucking good though.
