Make Mushroom Stock for a Good Ass Steak Dinner

The Stock

  • 1/4 lb of shiitake mushrooms

  • 6 cups water (or beef broth)

  • Whites of 2 green onions

  • 2-3 cloves of garlic

  • 2-3 Sprigs Thyme

The Steak Dinner

  • 1 cup rice

  • 2 steaks of your choosing

  • A veggie (for health)

Wipe your mushrooms clean, and remove stems (but keep them).

Cut the green onion whites into about 1” pieces

Peel your Garlic

Combine all stock ingredients in a large pot, bring to a boil, then simmer for an hour.

Strain the broth into a large bowl, keep the mushroom pieces and garlic. Let rest while you prep your steak and veggies.

Combine 2 cups of mushroom broth and a big pinch of salt with 1 cup of rice in a large pot (or rice cooker if you’re better at cooking rice than I am). Bring to a boil, then cover and reduce heat to low for about 11-12 minutes until rice is cooked.

Cook your steak however you do it, but for this recipe, do it on the stove in a pan so we can get those drippings. Remove steaks from pan and keep everything else in it.

Roughly chop mushrooms, and add to pan along with the leftover garlic, and simmer for about 5 minutes, adding more oil or butter if the pan is dry.

After simmered, coat mushrooms in flour, then add remaining mushroom stock. Set heat to low and simmer until you have a nice gravy.

Add rice and veggies to plate, put steak over rice, and mushroom gravy over steak.

The Bullshit

Do you have an extra hour to cook some mushroom stock before you make your steak tonight? You should probably get an extra hour cause this shit will impress the hell out of whoever you’re cooking it for (even yourself!).

Even if you don’t do the gravy, this makes the rice crazy good. This would work well with just chicken too (just use chicken broth instead of water).

Making stock is way easier than you think it is. Plus you get the extra satisfaction of making something and using it in a bunch of different stuff. Pretend you’re on Top Chef in a mushroom challenge or something.

Take the extra time and make a good ass steak dinner.
