The Recipe

Salsa Roja v.1

  • 4 Roma Tomatoes

  • 2-4 Dried Arbol Chiles

  • 4 Dried Ancho Chiles

  • 4 Dried Guajilo Chiles

  • 2 Jalapenos

  • 3 cloves garlic

  • 1/2 white onion

  • Juice of 1 lime

  • Juice of 1 orange

  • 1/2 bunch cilantro

  • 1 tsp fish sauce

  • 3-4 big pinches of salt (more to taste)

Bring a pot of water to a boil, then turn heat to medium.

Add all dried chiles, jalapenos, tomatoes, onion, and garlic to the pot of water and simmer for 15 minutes

Cut off the stems and add all ingredients to a blender, along with 1/4 cup of the chile water from your pot.

Blend (but make sure you leave the lid off or have a vent so it doesn’t explode all over your kitchen, it is all hot stuff.

Chill and serve.

The Bullshit

I’m gonna be experimenting with salsa for a while i think, this is my first attempt after a few days of salsa experiments. This is probably like a medium spice level, I think I’d like to experiment with adding more Arbol since i really like the heat and flavor of those.

I like the flavor profile overall, but there’s a local mexican restaurant that has my favorite salsa and i’m (not so) secretly trying to work my way towards that. This isn’t close to it, but I guess I gotta eat more mexican food this summer and use my new salsa making skills to work on different variations. Duty calls.
