Rice Vinegar, Lime, and Jalapeno Mignonette

The Recipe

  • Oysters (This recipe will probably cover up to 2-3 dozen oysters, maybe more, try it)

  • 1/2 Cup Rice Vinegar

  • 1 Small Shallot, Minced

  • Juice of 1 Lime (1/2 lime if you want less lime)

  • 2 Tsp Mirin

  • 1 Tbsp Minced Cilantro (Use the stems too, we want texture)

  • 1/2 Tsp Minced Ginger

  • 1/2 Jalapeno, Seeded, Stemmed, Minced

  • 1/2 tsp Fish Sauce

Combine All ingredients in a bowl. Start with the Rice Vinegar and Shallot, and add the rest in order. The fish sauce at the end really brought out some of the heat, so end with that. Also it’s easy to go overboard with it.

The Bullshit

This was my first recipe on this site, inspired by a now gone restaurant in the area that had the best oyster shooters.

Now they’re gone, so this is all I got. Fill up a shot glass and drop an oyster in there and shoot.
